Ok - the first of the recipes!  I made these for the dancing party, but not all of them made it to Adam & Mary’s!!  I don’t usually like melted chocolate, but these were great while they were still warm and the middles still a bit runny - even better with white chocolate.  I made a mixture of both.  The cutters used in the recipe are quite big, mine were slightly smaller so made more biscuits.  Guess I could have taken a photo to use in this post, but they didn’t hang about for long enough…

Ingredients:

150g unsalted butter (softened)

150g caster sugar

1 egg yolk

250g self-raising white flour

25g cocoa powder

18-20 squares chocolate (about 125g total)

Cream butter and sugar together, beat in egg yolk.

Sift flour and cocoa powder into the bowl and mix to firm dough.  Turn out onto lightly floured surface and knead lightly - chill for 30 mins

Roll one third of dough out and cut out 18 -20 circles using 4cm cutter.  Place onto greased baking tray and press a square of chocolate into the centre of each.  Roll out remaining dough and cut out 18-20 larger circles (5cm).  Lay these over the bases and press the edges together to seal in the chocolate squares.  Don’t worry if the larger circles crack a little.

Bake at 190 degrees centegrade (fan oven 180/gas mark 5) about 10 mins until biscuits have spread and risen.  Leave on the baking tray for 5 mins then remove and cool on wire rack.

Eat warm or wait until they cool (if you can) for a firmer centre.
